HOWHY is a new knife brand launched in 2024 by Jérémy Dagorne.
For over 15 years, Jérémy has been designing and manufacturing knives for customers in some of the world's finest restaurants. For a glimpse of his work: www.daghorn.com.
In parallel with this activity, and drawing on the experience and high standards he has acquired through his contact with some of the world's greatest chefs, Jérémy wanted to turn some of his knives into philosophical and committed objects. Not that you can change the face of the world with a simple knife, but because it's important to make people understand that objects are themselves bearers of values and that they can be used to propagate concrete utopias.
H O W + W H Y
HOWHY is an experiment, a laboratory. We don't have any certainties, but we do have a real conviction: if we ask ourselves, at every stage in the development of our knives and with the utmost honesty, these two simple questions HOW and WHY? then we will be making knives that are more than just knives.
Every technical choice is an ethical choice and every philosophical question must have a practical and aesthetic impact. The how and the why are always linked. These two questions will always be our roadmap and our identity.
S O M E E X A M P L E S ?
How can we ensure that you buy more than just an object when you buy a Howhy knife? How can we make our knives truly ‘useful’? How can we communicate without creating a buzz on social networks, without saying ‘we're the best’, which isn't the case. How can we avoid becoming hucksters through perfectly polished and completely fake storytelling? How can we convince you that you absolutely need a HOWHY knife if you don't! How can we work differently so as to give our staff as much freedom, time and creativity as possible? How can we distribute our knives in a way that really makes sense?

All these questions are pertinent, but you still have to be able to stand up to them. How can we never compromise? With a page like the one you're reading now, we've probably already lost 99% of potential buyers. Who cares? For us, people aren't buyers and we'd rather you were interested in what we do without buying any of our knives than the other way round...
Once you've said that, you have to go all the way and make sure that this conviction infuses all our decisions, even if it means accepting that HOWHY will not be financially stable enough to continue. That's the choice we're making.
Our approach is elitist, but hopefully in a beautiful, fair and important way.
And yes, HOWHY is based in Brittany...
